Easy Peasy Gnocchi Traybake
Ingredients
- 1 courgette
- 1 large red onion
- 3 asparagus
- 300g cherry tomatoes on the vine
- 6 vegan sausages
- 400g gnocchi
- Zest of 1 lemon
- A generous handful of fresh parsley
- A generous handful of fresh basil
- 2 tablespoons olive oil
- A generous pinch of salt and pepper
Preparation
Add the courgette, red onion, asparagus, sausages, and cherry tomatoes to a large tray. Drizzle with olive oil, salt, and pepper, and roast in the oven at 200 degrees Celsius for 20 minutes.
Cook the gnocchi according to package instructions, drain, and toss with a drizzle of oil to prevent sticking. Add the gnocchi to the tray, stir well, and roast for another 5 minutes.
Remove the tray from the oven and sprinkle with chopped parsley, basil, and lemon zest.
Notes
This recipe serves 2-3 people.
The dish reheats well and tastes great the next day.
