Simple Red Lentil Dahl
Ingredients
- 1 1/2 cups red lentils
- 1 red onion, chopped
- 1 large tomato, chopped
- 1 tsp turmeric
- 5 cups water
- olive oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 3 garlic cloves, crushed
- 2 chilies (optional)
- 50g spinach
- 1-2 cups coriander
Preparation
Heat olive oil in a pot over medium heat.
Add cumin seeds and mustard seeds and cook until they start to pop.
Stir in chopped onion, crushed garlic, and chilies if using, and sauté until softened.
Add turmeric and mix well.
Pour in red lentils and water, bring to a boil, then reduce heat and simmer until lentils are tender.
Mix in chopped tomato and spinach, cooking until the spinach wilts.
Stir in coriander and serve hot.
Tips
Serve with steamed rice or homemade flatbreads for a comforting meal.
