Spicy Louisiana Jambalaya Stew

Ingredients

  • 1 tablespoon vegetable oil
  • 2 sausages
  • 1 onion
  • 1 red bell pepper
  • 2 celery stalks
  • 4 garlic cloves
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground chili
  • 1 bay leaf
  • 1 can whole tomatoes
  • 1 liter chicken broth or water
  • 1/2 cup rice

Preparation

  1. Cut the sausage into thin slices. Heat the oil in the pot and brown for five minutes. Remove from heat and set aside.

  2. Add the onion, red bell pepper, celery, and garlic. Mix and cook for 8 minutes until the onion is translucent. Season with paprika, garlic powder, ground chili, and bay leaf.

  3. Add the tomatoes. Break them up with a spoon and cook for a few minutes, then add the chicken broth and bring to a boil.

  4. Add the rice and cook for 15 minutes. Add back the sausages and cook for another 15 minutes on low heat. Add more water if needed. Turn off and let rest for 5 minutes before serving hot.
