Spiced Beef and Vegetable Stew
Ingredients
- 1/2 teaspoon ground mastic
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon cardamom
- 1 teaspoon turmeric
- 1 teaspoon black pepper
- 1 tablespoon salt
- 3 bay leaves
- 5 whole cardamom pods
- 1 piece beef thigh meat
- 1 medium onion, quartered
- 1 tablespoon sugar
- 1 medium tomato, quartered
For sautéing
- 1 tablespoon ghee
- 1 medium onion, sliced
- 4 cloves crushed garlic
- 2 green chili peppers, chopped
- 1 large red bell pepper, cut into small slices
Preparation
In a bowl, place the mastic, cardamom, cumin, coriander, paprika, salt, and pepper, and mix well
In a pot, heat the ghee, add the meat and stir several times until golden brown
Sprinkle half the amount of spices and sugar on the meat and continue sautéing
Add bay leaves, cardamom, onion, and tomato and continue sautéing
Cover the meat with boiling water, cover the pot, and let it cook
Remove the meat, let it cool, and cut it into cubes as desired
In a skillet, heat the ghee, add onion, garlic, and pepper, and sauté lightly
Add the meat, sprinkle the remaining spices, sauté to get a nice color, and serve
