Green Beans with Lamb Stew

Ingredients

  • 2 tablespoons corn oil
  • 4 lamb pieces
  • 6 cardamom pods
  • 6 bay leaves
  • 1 cinnamon stick
  • 1 teaspoon black peppercorns
  • 1 large chopped onion

Green beans

  • 2 tablespoons olive oil
  • 1 large chopped onion
  • 1 kilogram broad green beans
  • 2 cups tomato juice
  • 2 tablespoons tomato paste
  • 1 tablespoon salt

Tadka

  • 1 tablespoon ghee
  • 6 crushed garlic cloves
  • 1 teaspoon ground coriander
  • 1 cup chopped green coriander

Preparation

  1. Heat the corn oil in a large pot over medium heat and brown the lamb with the spices and onion from the ingredients section.

  2. Add the green beans mixture and simmer until the beans are tender and the flavors are well combined.

  3. In a separate small pan, heat the ghee and cook the garlic and coriander until fragrant, then stir it into the main pot and serve.
