Spiced Lamb Shanks with Rice
Ingredients
- 4 lamb shanks
- 1 large onion, quartered
- 2 cinnamon sticks
- 10 cardamom pods
- 2 bay leaves
- 1 tablespoon salt
Rice
- 4 tablespoons corn oil
- 500 grams ground meat
- 4 cups Egyptian rice
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
Garnish
- fried almonds
- pistachios
Preparation
Heat oil in a wide pot and add lamb shanks, stir until browned.
Add water to the shanks, add bay leaves, cinnamon sticks, cardamom, and salt, cover the pot and cook on medium heat until done, then strain and reserve the broth.
Heat oil in a pot and add ground meat, cook until done.
Add cinnamon, ground cardamom, mixed spices, salt, and pepper to the ground meat and stir well.
Add rice and stir with the meat, then pour in the reserved broth, cover and cook on low heat until rice is done.
In a serving dish, place rice, top with lamb shanks and nuts, and serve.
