Arabian Spiced Chicken and Rice

Ingredients

Chicken mixture

  • 4 large boiled chicken fillets
  • 1/2 cup olive oil
  • 2 large onions
  • 2 crushed garlic cloves
  • 1 cup yogurt or labneh
  • 1 cup cream or kaymak
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 cup raisins
  • 1/4 cup lemon juice
  • 1/4 cup sumac

Rice mixture

  • 3 cups basmati rice
  • 2 bay leaves
  • 10 cardamom pods
  • 10 cloves
  • 1 tablespoon salt
  • 2 tablespoons corn oil
  • 1/2 cup olive oil

Garnish

  • Pine nuts
  • Sumac

Preparation

  1. Boil the chicken fillets if not already done, then set aside

  2. In a large pan, heat olive oil and sauté onions and crushed garlic until softened

  3. Add salt, black pepper, turmeric, yogurt or labneh, cream or kaymak, raisins, lemon juice, and sumac to the pan with the chicken and simmer until flavors are well combined

  4. For the rice, rinse basmati rice under cold water, then in a separate pot, bring water to a boil and add rice, bay leaves, cardamom pods, cloves, salt, corn oil, and olive oil

  5. Cook the rice until tender and fluffy, then drain if necessary

  6. Combine the cooked chicken mixture with the rice or serve layered together

  7. Garnish with pine nuts and sumac before serving
