Spinach and Pine Nut Fried Rice
Ingredients
- 2.5 cups cooked white rice
- 5 oz baby spinach
- 1/3 cup pine nuts
- 2 tsp toasted sesame oil
- 2 tsp soy sauce
- 2 tsp rice vinegar
Optional
- 1/2 - 1 tsp chili paste (for heat)
Preparation
In a warm pan, spread the pine nuts in one layer. Gently move them around until they start to become aromatic or change color. Set them aside.
In a food processor, pulse the baby spinach until finely chopped.
Sauté the spinach in the sesame oil and add the soy sauce and rice vinegar as it’s cooking.
Once the spinach has cooked down, add in the cooked rice and mix very well until completely incorporated.
Lastly, add in the pine nuts and cook everything for a few minutes until heated through, making sure to keep stirring.
