Vegan Chickpea Chicken Masala with Rice and Samosa

Ingredients

  • Chickpeas
  • Chicken-style strips
  • Onion
  • Garlic
  • Masala paste
  • Chopped tomatoes
  • Turmeric
  • Baby spinach
  • Brown rice
  • Vegetable samosa

Preparation

  1. Fry onion and garlic in a pan until softened

  2. Add masala paste and stir to combine

  3. Mix in chickpeas and chicken-style strips, cooking until heated through

  4. Add chopped tomatoes, turmeric, and baby spinach

  5. Stir and cook until spinach wilts and everything is well combined

  6. Serve with cooked brown rice and vegetable samosa
