Winter Melon Mung Beans Soup

Ingredients

  • 600g winter melon
  • 8 dried scallops
  • 1 corn, cut into pieces
  • 300g of pork bones or pork ribs or lean meat
  • 50g of job’s tears
  • 100g of mung beans
  • 40g of lotus seeds
  • 3 dried figs
  • 1 piece of citrus peel, pith removed
  • 2200ml of water

Preparation

  1. In a large pot, add the pork and pour in clean water; simmer over medium-low heat until boiling, then continue cooking for 3 minutes; remove and rinse to eliminate blood residue.

  2. Add all the ingredients to the large pot, bring to a boil, then cover and simmer on low heat for 2 hours until done.

Tips

  1. Remember that winter melon skin is nutritious and does not need to be peeled.

  2. For the pork bones, using sirloin bones is recommended as the meat is tender and can be eaten.
