Fuzzy Melon Soup with Octopus and Beans

Ingredients

  • 2 fuzzy melons, peeled
  • 1 octopus
  • 1 carrot
  • 1 corn cob
  • 300g lean meat
  • 100g peanuts
  • 100g adzuki beans
  • 3 dried dates
  • 1 tangerine peel, soaked
  • 2500ml water

Preparation

  1. Cook octopus and lean meat in a pot with water until boiling. Remove and rinse octopus, removing the purple membrane and organs.

  2. Add all ingredients to the pot, bring to a boil, and simmer covered for 2.5 hours.

Tips

  1. Cook fuzzy melon whole to avoid sour taste.

  2. Dry-fry octopus first to remove fishy smell and save time.
