Fuzzy Melon Soup with Octopus and Beans
Ingredients
- 2 fuzzy melons, peeled
- 1 octopus
- 1 carrot
- 1 corn cob
- 300g lean meat
- 100g peanuts
- 100g adzuki beans
- 3 dried dates
- 1 tangerine peel, soaked
- 2500ml water
Preparation
Cook octopus and lean meat in a pot with water until boiling. Remove and rinse octopus, removing the purple membrane and organs.
Add all ingredients to the pot, bring to a boil, and simmer covered for 2.5 hours.
Tips
Cook fuzzy melon whole to avoid sour taste.
Dry-fry octopus first to remove fishy smell and save time.
