Easy Vegan Version of Fettuccine Alfredo

Ingredients

  • 1 small/med white onion
  • 5 whole garlic cloves
  • 2 tbsp vegan butter
  • 3/4 cup veggie broth
  • salt & pepper
  • 1/4 cup nutritional yeast
  • 1 cup cashews
  • 1/4 of a lemon juiced
  • brown rice fettuccine noodles

Preparation

  1. Sauté onion & garlic with butter. You don’t need to chop up the onion small since we blend it up later.

  2. Once the onion and garlic are soften and brown add them to a blender. Add remaining ingredients into the blender. Blend till you get a creamy smooth consistency.

  3. Boil water for pasta and cook till ready.

  4. Pour alfredo sauce over the cooked noodles and mix up. Add fresh cracked black pepper and chili flakes ontop.
