Easy Vegan Version of Fettuccine Alfredo
Ingredients
- 1 small/med white onion
- 5 whole garlic cloves
- 2 tbsp vegan butter
- 3/4 cup veggie broth
- salt & pepper
- 1/4 cup nutritional yeast
- 1 cup cashews
- 1/4 of a lemon juiced
- brown rice fettuccine noodles
Preparation
Sauté onion & garlic with butter. You don’t need to chop up the onion small since we blend it up later.
Once the onion and garlic are soften and brown add them to a blender. Add remaining ingredients into the blender. Blend till you get a creamy smooth consistency.
Boil water for pasta and cook till ready.
Pour alfredo sauce over the cooked noodles and mix up. Add fresh cracked black pepper and chili flakes ontop.
