Forever Roasted Pumpkin with Mint Sauce Dinner
Ingredients
- pumpkin
- olive oil
- salt
- cauliflower
- lamb chops
- thick yoghurt
- fresh mint
- sugar
- cider vinegar
- water
Preparation
Coat the pumpkin with olive oil and salt without peeling or deseeding.
Roast the pumpkin at 180°C for 3 hours.
Chop the mint and mix it with sugar, salt, cider vinegar, and a touch of water to prepare the mint sauce.
Serve the roasted pumpkin with cauliflower, lamb chops, thick yoghurt, and fresh mint sauce.
