Spinach and Walnut Pesto Pasta
Ingredients
- 1/2 cup toasted walnuts
- 1/2 cup grated parmesan
- 1/4 cup olive oil
- 1/4 cup water
- salt and pepper
Preparation
Cook your pasta as per packet instructions ?Put all ingredients (apart from salt and pepper) in a blender and pulse till it’s a texture you like
If you like it smooth keep the blender going a little longer
If you want it a little looser, add a couple tablespoons more water
Taste the pesto and season to taste
Drain the pasta and mix the pesto through the warm pasta
