Spinach and Walnut Pesto Pasta

Ingredients

  • 1/2 cup toasted walnuts
  • 1/2 cup grated parmesan
  • 1/4 cup olive oil
  • 1/4 cup water
  • salt and pepper

Preparation

  1. Cook your pasta as per packet instructions ?Put all ingredients (apart from salt and pepper) in a blender and pulse till it’s a texture you like

  2. If you like it smooth keep the blender going a little longer

  3. If you want it a little looser, add a couple tablespoons more water

  4. Taste the pesto and season to taste

  5. Drain the pasta and mix the pesto through the warm pasta
