Midweek Chicken Pathia
Ingredients
- 2 tbsp veg oil
- 600g chicken thigh fillets -bite sized pieces
- 1 medium brown onion finely chopped
- 1 tbsp finely chopped garlic (garlic paste)
- 2 green chillies - chopped
- 1 tbsp finely chopped ginger (ginger paste)
- 2 bay leaves
- 1 tsp turmeric
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- 1-2 tsp chilli powder/cayenne pepper
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp dried methi leaves (optional)
- 400ml can chopped toms
- 100ml chicken stock
- 2 tbsp tomato purée
- 1 tbsp brown sugar
- 2 tsp white vinegar
- Salt and black pepper
- 1 tbsp lime juice
Preparation
Add the oil to your pan on a medium high heat and sauté the onions for a few mins before adding the ginger, green chilli, and garlic and sauté for a further 5 mins
Turn the heat up to high and add chicken, salt & pepper, dry spices, methi and bay leaves and stir fry for 3-5 mins, until the chicken is sealed on all sides
Add the chopped toms, tomato purée, chicken stock and white vinegar. Stir well, cover and bring up to a light simmer for 30 mins
Check seasoning. Add the lime juice, remove from heat and cover and rest for a few mins before serving
