Midweek Chicken Pathia

Ingredients

  • 2 tbsp veg oil
  • 600g chicken thigh fillets -bite sized pieces
  • 1 medium brown onion finely chopped
  • 1 tbsp finely chopped garlic (garlic paste)
  • 2 green chillies - chopped
  • 1 tbsp finely chopped ginger (ginger paste)
  • 2 bay leaves
  • 1 tsp turmeric
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1-2 tsp chilli powder/cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried methi leaves (optional)
  • 400ml can chopped toms
  • 100ml chicken stock
  • 2 tbsp tomato purée
  • 1 tbsp brown sugar
  • 2 tsp white vinegar
  • Salt and black pepper
  • 1 tbsp lime juice

Preparation

  1. Add the oil to your pan on a medium high heat and sauté the onions for a few mins before adding the ginger, green chilli, and garlic and sauté for a further 5 mins

  2. Turn the heat up to high and add chicken, salt & pepper, dry spices, methi and bay leaves and stir fry for 3-5 mins, until the chicken is sealed on all sides

  3. Add the chopped toms, tomato purée, chicken stock and white vinegar. Stir well, cover and bring up to a light simmer for 30 mins

  4. Check seasoning. Add the lime juice, remove from heat and cover and rest for a few mins before serving
