Aromatic Lamb Keema Curry
Ingredients
- 500g lamb mince
- 1 large onion finely chopped
- 2 green chillies, chopped
- 2 tbsp vegetable oil
- 1 heaped tbsp finely chopped garlic
- 1 heaped tbsp finely chopped ginger
- 2 bay leaves
- 1 heaped tsp turmeric
- 2.5 tbsp garam masala
- 1 tsp cayenne/chilli powder (more or less to taste)
- 1 tsp salt
- 400g tin chopped tomatoes
- 3 tbsp plain yoghurt
- 200ml lamb or beef stock
- 1.5 cups of frozen peas
- finish with:
- 2 handfuls chopped fresh coriander
Preparation
Add the oil to a medium hot pan and fry the onion until it starts to turn translucent, then add the chopped chilli and ginger and fry for another few minutes stirring regularly
Add the garlic and cook for one more minute
Turn up the heat to maximum and then add the lamb mince, breaking it up with your wooden spoon
Brown the lamb well for 6-8 mins stirring regularly
Reduce the heat back to medium high and add the bay leaves and spices and stir fry continuously for another few mins
Add the chopped tomatoes and cook for five mins before adding the yoghurt and stock
Bring up to a light simmer for 25 mins
Add the frozen peas, bring back up to a simmer for five mins, add the chopped coriander, season to taste and cover and rest for a few mins before serving
