Vegan Tomato Sauce Gnocchi with Kale and Mushrooms

Ingredients

  • 2-3 large king oyster mushrooms, sliced
  • 1/2 red onion, chopped
  • 1/2 tsp paprika
  • 1 tbsp tomato paste
  • 1/2 can chopped tomatoes
  • 1 tbsp tamari
  • 200g vegan gnocchi (ensure gluten-free if needed)
  • Large handful kale, de-stemmed and chopped

Preparation

  1. Place the king oyster mushrooms on a frying pan and cook until soft, around 2-3 minutes on each side. Remove and set aside.

  2. Meanwhile, add the onion, the paprika and the tomato paste to a non-stick saucepan. Sauté for 2 minutes, then pour in the chopped tomatoes and tamari. Cook on a low-medium heat for around 5 minutes, stirring frequently.

  3. Meanwhile, cook the gnocchi according to instructions on packaging.

  4. Once they are ready, stir them into the tomato sauce together with the kale. Serve immediately.
