Vegan Tomato Sauce Gnocchi with Kale and Mushrooms
Ingredients
- 2-3 large king oyster mushrooms, sliced
- 1/2 red onion, chopped
- 1/2 tsp paprika
- 1 tbsp tomato paste
- 1/2 can chopped tomatoes
- 1 tbsp tamari
- 200g vegan gnocchi (ensure gluten-free if needed)
- Large handful kale, de-stemmed and chopped
Preparation
Place the king oyster mushrooms on a frying pan and cook until soft, around 2-3 minutes on each side. Remove and set aside.
Meanwhile, add the onion, the paprika and the tomato paste to a non-stick saucepan. Sauté for 2 minutes, then pour in the chopped tomatoes and tamari. Cook on a low-medium heat for around 5 minutes, stirring frequently.
Meanwhile, cook the gnocchi according to instructions on packaging.
Once they are ready, stir them into the tomato sauce together with the kale. Serve immediately.
