Mini Galaxy Vegan Cheesecakes

Ingredients

  • 3 cups raw cashews
  • 1 cup coconut cream
  • 3/4 cup maple syrup
  • 1/2 cup lemon juice
  • 2 tsp vanilla
  • 1/2 cup coconut oil
  • 1 cup raspberries
  • 1 tbsp spirulina
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raw almonds
  • 10 dates, pitted
  • 1 cup raw walnuts
  • 3/4 unsweetened shredded coconut
  • 1/4 tsp sea salt

Preparation

  1. Soak cashews in water for several hours or overnight to soften

  2. Blend almonds, walnuts, dates, shredded coconut, and sea salt to make the crust mixture, then press into mini cheesecake molds or liners

  3. Drain and rinse cashews, then blend with coconut cream, maple syrup, lemon juice, vanilla, and coconut oil until smooth to create the filling

  4. Divide the filling into portions and mix in spirulina for green color and mashed berries for other colors to achieve a galaxy effect

  5. Pour the colored filling over the crust in layers or swirls, then chill in the refrigerator until set, typically 4-6 hours or overnight
