General Tso’s Tofu with Quinoa and Vegetables

Ingredients

  • 1 block extra firm tofu
  • 1 heaping tbsp cornstarch
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp cooking oil
  • 1/4 cup general tso sauce

Accompaniments

  • 1 cup cooked quinoa
  • 1 head of broccoli
  • 1 large handful of tender green asparagus
  • Sesame seeds

Preparation

  1. Cut tofu into big chunks and add to a bowl with cornstarch, spices, and oil. Toss until evenly coated.

  2. Spread cubes on a lined baking sheet and bake at 375 F/190 C for 30-45 minutes, stirring once or twice for even baking.

  3. Add baked tofu to a non-stick pan, pour sauce over it, and stir on medium heat for a couple of minutes until sticky and caramelized.

  4. Cook quinoa according to package instructions

  5. Sauté or steam broccoli and asparagus until tender

  6. Serve tofu over quinoa and veggies, sprinkle with sesame seeds.
