Hearty Vegan Tofu and Vegetable Curry
Ingredients
- Butternut squash
- Spinach
- Peas
- Tofu
- 1 can full fat coconut milk
Curry blend
- 1 tbsp curry powder
- 1 tbsp turmeric
- 2 tsp cumin
- 1 tsp Garam Masala
- 1/2 tsp ground coriander
- 1 tsp ground ginger
- 1/4 tsp cayenne
- Pinch chilli flakes
- Cracked pepper
- Salt
Preparation
Combine all spices in the curry blend in a small bowl.
Heat a tablespoon of oil in a large pot over medium heat.
Add the curry blend to the pot and cook for 1-2 minutes until fragrant.
Add butternut squash, peas, tofu, and any other vegetables to the pot.
Pour in the can of full fat coconut milk and stir to combine.
Bring to a simmer and cook for 20-25 minutes until vegetables are tender.
Stir in spinach and cook until wilted, about 2-3 minutes.
