Hearty Vegan Tofu and Vegetable Curry

Ingredients

  • Butternut squash
  • Spinach
  • Peas
  • Tofu
  • 1 can full fat coconut milk

Curry blend

  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 2 tsp cumin
  • 1 tsp Garam Masala
  • 1/2 tsp ground coriander
  • 1 tsp ground ginger
  • 1/4 tsp cayenne
  • Pinch chilli flakes
  • Cracked pepper
  • Salt

Preparation

  1. Combine all spices in the curry blend in a small bowl.

  2. Heat a tablespoon of oil in a large pot over medium heat.

  3. Add the curry blend to the pot and cook for 1-2 minutes until fragrant.

  4. Add butternut squash, peas, tofu, and any other vegetables to the pot.

  5. Pour in the can of full fat coconut milk and stir to combine.

  6. Bring to a simmer and cook for 20-25 minutes until vegetables are tender.

  7. Stir in spinach and cook until wilted, about 2-3 minutes.
