Incredible Vegan Mushroom Stroganoff

Ingredients

  • 1 onion diced
  • 2-3 garlic cloves minced
  • 1 tbsp vegetable oil
  • 11 oz fresh mushrooms sliced
  • 4 tbsp white wine (optional)
  • 1 tbsp tamari or soy sauce
  • 3/4 cup vegetable broth or water
  • 3/4 cup plant-based milk or cream
  • 2 tbsp cornstarch
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • A pinch of red pepper flakes
  • Salt & black pepper to taste
  • 1 tbsp nutritional yeast flakes (optional)
  • Fresh thyme leaves and/or parsley (and/or tarragon) chopped

Preparation

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Add diced onion and minced garlic, sauté until softened.

  3. Add sliced mushrooms and cook until they release their moisture and brown.

  4. If using, add white wine and let it evaporate.

  5. Stir in tamari or soy sauce, vegetable broth, plant-based milk or cream, cornstarch, onion powder, garlic powder, smoked paprika, red pepper flakes, salt, and black pepper.

  6. Bring to a simmer and cook until thickened.

  7. Optionally, add nutritional yeast flakes for extra flavor.

  8. Stir in chopped fresh thyme, parsley, and/or tarragon.

  9. Serve with brown rice or pasta of choice.
