Incredible Vegan Mushroom Stroganoff

Ingredients

  • 1 onion diced
  • 2-3 garlic cloves minced
  • 1 tbsp vegetable oil
  • 11 oz fresh mushrooms sliced
  • 1 tbsp tamari or soy sauce
  • 3/4 cup vegetable broth or water
  • 3/4 cup plant-based milk or cream
  • 2 tbsp cornstarch
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • A pinch of red pepper flakes
  • Salt and black pepper to taste

Optional

  • 4 tbsp white wine
  • 1 tbsp nutritional yeast flakes
  • Fresh thyme leaves and/or parsley and/or tarragon chopped

Preparation

  1. Heat oil in a pan over medium heat.

  2. Add diced onion and minced garlic, sauté until softened.

  3. Add sliced mushrooms and cook until browned.

  4. If using, add white wine and let it evaporate.

  5. Stir in tamari, vegetable broth, plant-based milk, cornstarch, onion powder, garlic powder, smoked paprika, red pepper flakes, salt, and pepper.

  6. Bring to a simmer and cook until thickened.

  7. Optionally, add nutritional yeast and chopped fresh herbs.

  8. Serve over brown rice or pasta of choice.
