Pad See Ew Thai Stir-Fry

Ingredients

  • 1.5 lbs fresh flat rice noodles (uncut folded version)
  • 2 cups Chinese broccoli (Gai Lan), chopped
  • 8 oz firm tofu
  • 2 cloves garlic, finely chopped
  • oil, to taste
  • white pepper, to taste
  • salt, to taste

Sauce

  • 2 tablespoons stir fry sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar

Preparation

  1. Mix the sauce ingredients together until well combined and set aside.

  2. Prepare the fresh flat rice noodles by slicing them into 3/4-inch ribbons and separating the strands to loosen up. If the noodles are stiff, soften them in a microwave or under hot water.

  3. In a heated non-stick pan, add the noodles and sauce, then toss them constantly to avoid sticking and until the sauce is absorbed. Transfer the noodles to a plate.

  4. Using the same pan, add 3 teaspoons of oil and sauté the garlic until fragrant.

  5. Add the tofu and greens, then stir fry for about 2 minutes.

  6. Add the noodles back in, along with some white pepper, and give it a quick toss until all ingredients are well combined. Season with salt if needed and serve warm.
