Vegan Chickpea Curry with Spinach

Ingredients

  • 1 small onion
  • 2 garlic cloves
  • 1 tsp ginger
  • 1-2 tsp curry powder
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • Pepper to taste
  • 1 can chopped tomatoes
  • 1 tbsp tomato paste
  • 1 can chickpeas
  • 1 can coconut milk
  • some spinach

Preparation

  1. Sauté onion, garlic and ginger in a large pan for 3-5 minutes.

  2. Stir in spices, tomatoes and tomato paste, and cook for another 5 minutes.

  3. Add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 minutes.

  4. Serve over brown rice.
