Vegan Chickpea Curry with Spinach
Ingredients
- 1 small onion
- 2 garlic cloves
- 1 tsp ginger
- 1-2 tsp curry powder
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp salt
- Pepper to taste
- 1 can chopped tomatoes
- 1 tbsp tomato paste
- 1 can chickpeas
- 1 can coconut milk
- some spinach
Preparation
Sauté onion, garlic and ginger in a large pan for 3-5 minutes.
Stir in spices, tomatoes and tomato paste, and cook for another 5 minutes.
Add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 minutes.
Serve over brown rice.
