Cheezy Chorizo Potato Bake

Ingredients

  • ?vegan chorizo (my dad bought it for me! Sub for soy sauce marinated tofu or any other mock meat)
  • ?3 medium white potatoes
  • ?oil
  • ?garlic
  • ?onion powder
  • ?onion powder
  • ?broccoli
  • ?spinach
  • ?vegan cheese (optional)
  • ?breadcrumbs
  • CASHEW CHEEZ SAUCE
  • ? handful of cashews
  • ?approx 1/2L soy milk
  • ?lemon juice
  • ?nutritional yeast
  • ?mustard
  • ?lemon juice
  • ?salt
  • ?Garlic & onion powder

Preparation

  1. CHEEZ SAUCE

  2. Boil cashews or soak overnight

  3. Add boiled ashes and all other ingredients to a blender

  4. Blend on high until creamy and smooth

  5. Add to a saucepan on a low heat. Stir until thickened up and heated through

  6. POTATO BAKE

  7. Cube potato’s and steam until tender

  8. Shake potatoes in colander to create rough edges. ?in a large oven proof skillet, fry potatoes, chorizo (or tofu/ diced up mock meat) with garlic and salt for 5 minutes

  9. Add remaining veggies and spices. Fry for 10-15 more minutes

  10. Flatten out mix. Add cashew CHEEZ sauce on top, then vegan CHEEZ, then breadcrumbs

  11. Chuck it in the oven for 20 minutes. Pop it under the grill for 5 minutes to crisper up
