Roasted Cauliflower Vegan Burger

Ingredients

  • Half cauliflower
  • Lentil hummus
  • Micro greens
  • Lettuce leaves
  • Tomato
  • Mint chutney
  • Black pepper
  • Burger buns

Preparation

  1. Roast the cauliflower in the oven until tender and golden brown

  2. Prepare the lentil hummus and mint chutney if not already made

  3. Toast the burger buns if desired for added crunch

  4. Assemble the burger by spreading hummus on the bottom bun, adding roasted cauliflower, micro greens, lettuce leaves, sliced tomato, a dash of mint chutney, and seasoning with black pepper
