Caribbean Rice and Beans

Ingredients

  • 2.5 cups cooked Organic Brown Jasmine or Long Grain Rice
  • 1 can of Red Kidney Beans
  • 1/4 cup Water
  • 6.5 oz of Coconut Milk
  • 1/2 cup chopped Onions
  • 2 cloves of Garlic minced
  • 2 tsp of ground Cumin
  • 2 tsp of chopped Thyme
  • 2-3 tsp of Creole or Cajun Seasoning
  • 1 Bay Leaf
  • Salt & Pepper to taste

Preparation

  1. Saute the onions until translucent

  2. Add the kidney beans, garlic, and spices and continue to cook on medium-low heat for 5-8 minutes, adding water to prevent sticking

  3. Add the coconut milk and reduce the heat slightly. Let cook for 10 minutes

  4. Add the rice and mix well

  5. Garnish with thyme leaves and any other green herb like parsley or cilantro
