Vegan Kale Walnut Pesto

Ingredients

  • 1 1/2 cup packed kale leaves
  • 1/2 cup EVOO
  • 1/3 cup walnuts
  • 1/4 cup water
  • 2 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • 2 tbsp fresh lime juice
  • 1 large garlic clove
  • 1 tbsp nutritional yeast (optional)
  • S&P to taste

Preparation

  1. Blitz all ingredients together in a food processor till smooth

  2. Add extra water to thin sauce if too thick
