Easy Skillet Chicken with Roasted Vegetables

Ingredients

  • 2 chicken breasts
  • garlic
  • pink Himalayan salt
  • pepper
  • olive oil
  • colorful potatoes
  • carrots

Preparation

  1. Heat a skillet over medium heat.

  2. Sprinkle 2 chicken breasts with garlic, pink Himalayan salt, and pepper.

  3. After about 5 minutes, add some olive oil to the skillet and add the chicken.

  4. Cook for 6-7 minutes, then flip and cook for another 6-7 minutes.

  5. Let the chicken cool off in the pan for a few minutes before serving.

  6. For the veggies, coat colorful potatoes and carrots in 1 tablespoon olive oil, pepper, and pink Himalayan salt.

  7. Bake the potatoes at 450F for 35 minutes and the carrots at 450F for 40 minutes.

  8. Use a meat thermometer to check the internal temperature of the chicken to ensure it is fully cooked.
