Baked Sweet Potatoes with Toppings
Ingredients
- 2 medium sweet potatoes
- Juice of 1/2 medium lime
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 (19 oz) can black beans
- 12 cherry tomatoes
- 2-3 green onions
- Sriracha, to taste (optional)
Dilly hummus mix
- 1/2 cup hummus
- 2-4 cloves garlic
- Juice of 1/2 medium lemon
- 1/4 teaspoon maple syrup
- 1-2 tablespoons fresh dill
- 1-2 tablespoons water or plant-based milk
Optional additions
- Roasted chickpeas (optional)
- Guacamole (optional)
Preparation
Preheat oven to 200°C
Cut sweet potatoes in half and season with lime juice, cinnamon, and cumin
Bake for 30-40 minutes until tender
Prepare dilly hummus by mixing hummus, garlic, lemon juice, maple syrup, dill, and thinning with water or milk if needed
Prepare toppings: drain and rinse black beans, halve cherry tomatoes, slice green onions
Assemble by topping the baked sweet potatoes with black beans, optional roasted chickpeas, cherry tomatoes, green onions, optional guacamole, and drizzle with dilly hummus and sriracha
