Classic Chicken Caesar Salad

Ingredients

  • romaine lettuce
  • 1/2 cup mayonnaise
  • 2 tablespoons shredded Parmesan or pecorino
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste (optional)
  • salt and pepper to taste
  • herb crostini (store-bought)
  • chicken (quantity not specified)
  • olive oil for cooking
  • chili flakes
  • paprika
  • garlic powder

Preparation

  1. Wash, dry, and chop the romaine lettuce.

  2. For the dressing, combine 1/2 cup mayonnaise, 2 tablespoons shredded Parmesan or pecorino, 2 tablespoons lemon juice, 1 tablespoon olive oil, 2 minced garlic cloves, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon anchovy paste (optional), salt, and pepper.

  3. Crumble the herb crostini.

  4. Cook the chicken: heat olive oil in a pan or on a grill, season with salt, pepper, chili flakes, paprika, and garlic powder, and cook for about 6 minutes per side on the stove top or grill for a total of 12 minutes.

  5. Toss the salad with the dressing, sprinkle extra shredded Parmesan, and top with the grilled chicken.

  6. Note: This salad is quick to prepare and can be considered healthy if using homemade dressing; store-bought crostini can substitute for homemade croutons to avoid oven use.
