Classic Chicken Caesar Salad
Ingredients
- romaine lettuce
- 1/2 cup mayonnaise
- 2 tablespoons shredded Parmesan or pecorino
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 2 garlic cloves minced
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon anchovy paste (optional)
- salt and pepper to taste
- herb crostini (store-bought)
- chicken (quantity not specified)
- olive oil for cooking
- chili flakes
- paprika
- garlic powder
Preparation
Wash, dry, and chop the romaine lettuce.
For the dressing, combine 1/2 cup mayonnaise, 2 tablespoons shredded Parmesan or pecorino, 2 tablespoons lemon juice, 1 tablespoon olive oil, 2 minced garlic cloves, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon anchovy paste (optional), salt, and pepper.
Crumble the herb crostini.
Cook the chicken: heat olive oil in a pan or on a grill, season with salt, pepper, chili flakes, paprika, and garlic powder, and cook for about 6 minutes per side on the stove top or grill for a total of 12 minutes.
Toss the salad with the dressing, sprinkle extra shredded Parmesan, and top with the grilled chicken.
Note: This salad is quick to prepare and can be considered healthy if using homemade dressing; store-bought crostini can substitute for homemade croutons to avoid oven use.
