Indian Inspired Butter Chickpeas Dish
Ingredients
- 1 large red onion
- 2 tbsp coconut oil
- 1 tsp salt
- 4 garlic cloves
- 1 tbsp fresh ginger
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp garam masala
- 1 cinnamon stick
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) coconut cream
- 3 cups chickpeas
- 1 tbsp corn starch (optional, for thickening)
- 1 tbsp water (optional, for thickening)
Preparation
Saute one large red onion in 2 tbsp coconut oil and 1 tsp salt until golden.
Add 4 garlic cloves and 1 tbsp fresh ginger, both chopped.
Add 2 teaspoons cumin, paprika, garam masala and 1 cinnamon stick.
Add one can of diced tomatoes (28 ounces).
Add one can of coconut cream (15 ounces) and let everything simmer for about 10 minutes.
Blend everything except the cinnamon stick until smooth (optional but recommended).
Add 3 cups chickpeas to the sauce and let it simmer for 10 more minutes or until desired consistency.
If desired, add a mixture of 1 tbsp corn starch and 1 tbsp water to thicken the sauce.
Enjoy with basmati rice and/or fresh naan.
