Oil-Free Broccoli Chickpeas in Cashew White Sauce

Ingredients

  • 1 cup raw cashews
  • 1/3 cup nutritional yeast
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground white pepper
  • 1 1/2 cups water
  • Salt to taste
  • 3 cups broccoli florets
  • 2 cups cooked chickpeas

Preparation

  1. Cover raw cashews with water in a saucepan, bring to a boil, then set aside to soak for 15 minutes

  2. Blanch broccoli florets by boiling for a couple of minutes and then running under cold water

  3. Blend soaked cashews, nutritional yeast, garlic powder, onion powder, ground white pepper, and water until smooth, then season with salt

  4. Heat the blended sauce in a large saucepan until it begins to thicken

  5. Stir in cooked chickpeas and blanched broccoli florets

  6. Cook until the mixture is heated through

  7. Serve with pasta
