Baked Buffalo Cauliflower Bites
Ingredients
- 1/2 head cauliflower, cut into 1.5-inch florets
- 1 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3/4 cup coconut milk
- 2 tsp apple cider vinegar
- 2 tbsp vegan hot sauce
- 1 1/2 cups Panko bread crumbs
- 1 tsp paprika
- 1/2 tsp garlic powder
Buffalo sauce
- 1/2 cup hot sauce
- 2 tbsp coconut oil
- 1 tbsp organic sugar
- 2 tsp apple cider vinegar
Preparation
Preheat oven to 425°F
In a bowl, mix flour, salt, pepper, paprika, and garlic powder
In another bowl, combine coconut milk, apple cider vinegar, and vegan hot sauce
Dip cauliflower florets in the wet mixture, then coat with Panko bread crumbs
Place coated cauliflower on a baking sheet and bake for 20-25 minutes until golden and crispy
For the buffalo sauce, heat hot sauce, coconut oil, organic sugar, and apple cider vinegar in a saucepan until well combined
Toss the baked cauliflower in the buffalo sauce and serve immediately
