Cabbage and Celery Soup
Ingredients
- 1/2 medium head cabbage, chopped
- 2 stalks celery, chopped
- 3 medium tomatoes, chopped
- 1 cup green bell pepper, chopped
- 1 cup spinach, chopped
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon corn oil
Preparation
In a thick-bottomed pot, add the oil and heat over medium heat.
Add the onion and stir with a wooden spoon until softened.
Add the cabbage and celery, and stir until the cabbage's moisture evaporates.
Add the tomatoes, spinach, salt, and pepper, then stir the vegetables for 2 to 3 minutes.
Add the broth and cook the soup for 15 minutes until the vegetables are fully cooked.
Using a hand vegetable mill, puree the soup until smooth.
Serving suggestions
Serve the soup with lemon juice and toasted bread.
