Cabbage and Celery Soup

Ingredients

  • 1/2 medium head cabbage, chopped
  • 2 stalks celery, chopped
  • 3 medium tomatoes, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon corn oil

Preparation

  1. In a thick-bottomed pot, add the oil and heat over medium heat.

  2. Add the onion and stir with a wooden spoon until softened.

  3. Add the cabbage and celery, and stir until the cabbage's moisture evaporates.

  4. Add the tomatoes, spinach, salt, and pepper, then stir the vegetables for 2 to 3 minutes.

  5. Add the broth and cook the soup for 15 minutes until the vegetables are fully cooked.

  6. Using a hand vegetable mill, puree the soup until smooth.

Serving suggestions

  1. Serve the soup with lemon juice and toasted bread.
