Golden Lentil and Vegetable Soup

Ingredients

  • Olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 6 cloves garlic, minced
  • 2 tsp turmeric
  • 1/2 tsp chili flakes
  • 8 cups (2 liters) vegetable broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • Juice of 1.5 lemons
  • 1 cup (240 ml) stelline star pasta
  • 1 cup (240 ml) red lentils
  • 300g frozen baby peas
  • rosemary stalks
  • 4 bay leaves
  • Parmesan
  • Extra virgin olive oil, for drizzling

Preparation

  1. In a large pot, heat olive oil and sauté diced onions and carrots until softened.

  2. Add minced garlic, turmeric, salt, pepper and chili flakes, and stir for a minute.

  3. Pour in vegetable broth, star pasta, red lentils, frozen baby peas, rosemary stalks, lemon juice and bay leaves.

  4. Bring the soup to a simmer and cook until the pasta and lentils are tender.

  5. Serve the soup with grated Parmesan or a vegan alternative and a drizzle of extra virgin olive oil.
