Golden Lentil and Vegetable Soup
Ingredients
- Olive oil
- 1 onion, diced
- 2 carrots, diced
- 6 cloves garlic, minced
- 2 tsp turmeric
- 1/2 tsp chili flakes
- 8 cups (2 liters) vegetable broth
- 1 tsp salt
- 1/2 tsp pepper
- Juice of 1.5 lemons
- 1 cup (240 ml) stelline star pasta
- 1 cup (240 ml) red lentils
- 300g frozen baby peas
- rosemary stalks
- 4 bay leaves
- Parmesan
- Extra virgin olive oil, for drizzling
Preparation
In a large pot, heat olive oil and sauté diced onions and carrots until softened.
Add minced garlic, turmeric, salt, pepper and chili flakes, and stir for a minute.
Pour in vegetable broth, star pasta, red lentils, frozen baby peas, rosemary stalks, lemon juice and bay leaves.
Bring the soup to a simmer and cook until the pasta and lentils are tender.
Serve the soup with grated Parmesan or a vegan alternative and a drizzle of extra virgin olive oil.
