Battered and Baked Sweet and Sour Cauliflower

Ingredients

  • 1-2 Tbsp vegetable oil
  • 2.5 cups unflavored soy or almond milk
  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 large cauliflower crown
  • 2/3 cup soy sauce
  • 2/3 cup maple syrup
  • 1/2 cup rice vinegar
  • 4 tsp sesame oil
  • 1 Tbsp fresh grated ginger
  • 2 garlic cloves
  • 1 tsp sriracha (optional)
  • 2 Tbsp tapioca starch/flour
  • 1 cup cold water
  • Zest and juice from 1 navel orange

Preparation

  1. Preheat oven to 450°F and line a baking sheet with parchment paper or oil it.

  2. Stir milk, flour, salt and baking powder together in a small bowl. Generously coat each floret in batter and arrange in a single layer on the baking sheet. Bake for 15 minutes.

  3. Mix tapioca starch and water first, then add all the other ingredients into a saucepan and heat until hot and thick.

  4. Flip the florets and sprinkle some oil on them or brush it on. Bake for 10 minutes more.

  5. Dump most of the sauce on the florets and gently stir to coat. Bake for 5 minutes more.

  6. Take the sheet out and sprinkle with toasted sesame seeds. Sesame seeds are key and can't be skipped. Top with green onions and other pretty things.
