Cauliflower Bites with Homemade Teriyaki Sauce
Ingredients
- 1 cauliflower
- 1 cup spelt flour
- 1 teaspoon paprika
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 cup cashew milk or milk of choice
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons baking soda
- 1 tablespoon spring onions for garnishing
- 1 teaspoon black sesame seeds
- 1 teaspoon white sesame seeds
- 1 cup grape seed oil
Teriyaki sauce
- 1 cup water
- 6 tablespoons maple syrup
- 1/4 cup soy sauce
- 2 garlic cloves
- 1/2 teaspoon ground ginger
- 2 tablespoons tapioca flour
- 1/4 cup cold water
Preparation
Cut the cauliflower into florets and boil for 10 minutes. Drain and set aside.
In a bowl place the milk.
In a separate bowl add the flour, salt, pepper, paprika, onion powder, garlic powder and mix.
Then add the milk and whisk until smooth. Add more milk if mixture is too thick.
Place the cauliflower pieces in the batter and fry in a medium pan with oil.
Place the cauliflower bites on absorbent paper and drain.
Once drained place the cauliflower in a bowl and add the teriyaki sauce or sauce of choice and toss.
Garnish with spring onions and sesame seeds.
Teriyaki sauce
In a pan place the water, maple syrup, garlic and ginger and simmer on medium heat.
Place the tapioca flour and water in a bowl and mix well then add it to the pan and stir until you have a thick consistency.
Place the sauce in a sterilised jar and let it cool then refrigerate.
