Creamy One Pot Pasta
Ingredients
- Olive oil
- 1 onion
- 3 garlic cloves
- 2 tbsp tomato paste
- 1 pint grape tomatoes
- Salt and pepper to taste
- 2 1/2 cups vegetable broth
- 2 1/2 cups plant-based milk
- 16 oz penne pasta
- 5 oz spinach
- 1/3 cup nutritional yeast
Preparation
Chop the onion and garlic, and halve the grape tomatoes.
Heat olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic; sauté until softened.
Stir in the tomato paste and cook for 1-2 minutes.
Add the halved grape tomatoes, salt, and pepper; cook for a few minutes until tomatoes begin to soften.
Pour in the vegetable broth and plant-based milk, then add the penne pasta.
Bring to a simmer and cook for 10 minutes, or until pasta is almost tender.
Stir in the spinach and nutritional yeast.
Cook for an additional 2-3 minutes, stirring, until spinach is wilted and pasta is fully cooked.
