Creamy One Pot Pasta

Ingredients

  • Olive oil
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 pint grape tomatoes
  • Salt and pepper to taste
  • 2 1/2 cups vegetable broth
  • 2 1/2 cups plant-based milk
  • 16 oz penne pasta
  • 5 oz spinach
  • 1/3 cup nutritional yeast

Preparation

  1. Chop the onion and garlic, and halve the grape tomatoes.

  2. Heat olive oil in a large pot over medium heat.

  3. Add the chopped onion and minced garlic; sauté until softened.

  4. Stir in the tomato paste and cook for 1-2 minutes.

  5. Add the halved grape tomatoes, salt, and pepper; cook for a few minutes until tomatoes begin to soften.

  6. Pour in the vegetable broth and plant-based milk, then add the penne pasta.

  7. Bring to a simmer and cook for 10 minutes, or until pasta is almost tender.

  8. Stir in the spinach and nutritional yeast.

  9. Cook for an additional 2-3 minutes, stirring, until spinach is wilted and pasta is fully cooked.
