Sweet Potato Mac and Cheese
Ingredients
- 8 oz (225g) dry pasta
- 1 medium sweet potato (~250g), peeled and chopped
- 3 tbsp (20g) nutritional yeast
- 3 cloves garlic
- 1/2 tsp each: salt, black pepper, chili flakes (or to taste)
- 1/2 cup (~70g) almonds, toasted
- 1/2 cup (120g) plant-based milk, plus more as needed
- 1-2 tbsp lemon juice, to taste
Preparation
Steam, boil, or bake the sweet potato until fork-tender, then let cool for 10 minutes.
Meanwhile, boil your pasta according to package instructions; drain and set aside.
In a blender, combine everything except for the pasta and blend well.
Add more milk as needed to reach a smooth consistency.
Add more seasoning to taste, then pour the sauce mixture into the pasta and toss well.
Serve immediately.
