Sweet Potato Mac and Cheese

Ingredients

  • 8 oz (225g) dry pasta
  • 1 medium sweet potato (~250g), peeled and chopped
  • 3 tbsp (20g) nutritional yeast
  • 3 cloves garlic
  • 1/2 tsp each: salt, black pepper, chili flakes (or to taste)
  • 1/2 cup (~70g) almonds, toasted
  • 1/2 cup (120g) plant-based milk, plus more as needed
  • 1-2 tbsp lemon juice, to taste

Preparation

  1. Steam, boil, or bake the sweet potato until fork-tender, then let cool for 10 minutes.

  2. Meanwhile, boil your pasta according to package instructions; drain and set aside.

  3. In a blender, combine everything except for the pasta and blend well.

  4. Add more milk as needed to reach a smooth consistency.

  5. Add more seasoning to taste, then pour the sauce mixture into the pasta and toss well.

  6. Serve immediately.
