Crunchy Beans Hakka Stir-Fry with Spiced Tofu

Ingredients

  • ~ 1 lb French beans, sliced diagonally⁣
  • ~ 4 oz *spiced tofu, sliced thinly⁣
  • ~ 3 Thai chilies⁣
  • ~ 2 cloves garlic, sliced⁣
  • ~ oil⁣
  • ~ salt to taste⁣
  • Sauce:⁣
  • ~ 1 tablespoon soy sauce/tamari⁣
  • ~ 1 tablespoon mushrooms stir fry sauce (see highlights for homemade recipe)⁣
  • ~ 1 tablespoon Chinese cooking wine (Shaoxing)⁣
  • ~ a dash of white pepper⁣

Preparation

  1. Blanch cut beans in hot boiling water, drain well, then rinse with cold water/ice water to stop the cooking process.⁣

  2. To make the stir-fry, sauté garlic with 1 teaspoon oil in a wok or non-stick pan until fragrant. Then, stir in tofu, Thai chilies & continue to cook for 1-2 minutes. Add in French beans and toss with sauce until well combined. Serve warm with a bowl of rice.⁣

  3. Seasoned pan fried firm tofu can be substituted for spiced tofu⁣
