Easy Vegan Kiwi Tart

Ingredients

Crust

  • 2 cups shredded coconut
  • 3/4 cup coconut oil, room temperature
  • 1/4 cup spelt flour or coconut flour
  • 3 tbsp agave syrup
  • lime zest from 1 lime
  • a pinch of fine sea salt

Filling

  • 400g dairy free yogurt
  • 40g vanilla pudding powder

Preparation

  1. Preheat your oven to 360F.

  2. In a medium bowl combine the shredded coconut with the flour, coconut oil, agave syrup, lime zest, and salt. Use your hands to combine the ingredients and press them into a round pan, ensuring the bottom is thin.

  3. Bake for about 8-10 minutes or until slightly golden brown.

  4. Fill the tart with dairy free yogurt mixed with vanilla pudding powder.

  5. Refrigerate for at least 1 hour before decorating the tart with fresh fruits.
