Grilled Chicken Shawarma Skewers with Lemon Salad

Ingredients

Chicken marinade

  • 3/4 cup olive oil
  • 2 garlic cloves grated or finely chopped
  • 3 tablespoons lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 3/4 teaspoon turmeric
  • 1/4 teaspoon sumac
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon Kosher salt
  • Ground black pepper

Skewers

  • Avocado oil for wiping on grill
  • 2 pounds skinless boneless chicken breast cut into 1 inch cubes
  • 1 lemon sliced thin
  • 1 red onion cut into 1 inch chunks

Preparation

  1. Mix marinade ingredients together in a large bowl and add cubed chicken. Toss to coat so all the chicken is coated evenly

  2. Cover bowl with a sheet of plastic wrap and refrigerate for at least 30 minutes and up to overnight

  3. Preheat grill pan or outdoor grill to high heat and skewer chicken cubes onto skewers, alternating every few with lemon slices and onion wedges

  4. Grill shawarma skewers for 4-5 minutes per side or until a deep char is formed and chicken is cooked through

Tips

  1. Serve with a simple salad dressed with lemon juice and olive oil
