Hearty Red Lentil Chili with Chipotle and Ginger
Ingredients
- 1 cup green lentils
- 1 cup red lentils
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 15 oz can diced tomatoes
- 2 tbsp tomato paste
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 tsp smoked paprika
- 1 tsp chipotle powder
- 2 tsp chili powder
- 1 tsp cumin
- 2 tbsp maple syrup
- 4 cups vegetable broth
- Salt and pepper to taste
Preparation
In a medium pot, add onions and sauté until softened, about 3 minutes.
Add red bell pepper, garlic, and ginger, and sauté until fragrant.
Add tomato paste and seasonings, stir for 2-3 minutes until fragrant.
Add tomatoes, lentils, maple syrup, and vegetable broth. Stir to combine, bring to a boil, reduce heat, and cook for 30-40 minutes until lentils are tender and chili thickens.
Instant pot method
Set Instant Pot to sauté mode and sauté onions until softened, about 3 minutes.
Add red bell pepper, garlic, and ginger, and sauté until fragrant.
Add tomato paste and seasonings, stir for 2-3 minutes until fragrant.
Add tomatoes, lentils, maple syrup, and vegetable broth.
Seal the lid and set to manual pressure for 10 minutes.
Allow for natural pressure release and stir well before serving.
