King Oyster Mushroom Broccoli Rabe Fusilli

Ingredients

  • Fusilli pasta
  • 4 cloves chopped garlic
  • 1 tablespoon olive oil
  • Pinch of crushed red pepper (optional)
  • 1 pound sliced king oyster mushrooms
  • Salt (to taste)
  • 1/2 bunch chopped broccoli rabe
  • 8 halved brussels sprouts
  • 3 quartered baby red bell peppers
  • 2 tablespoons vegan butter
  • Water
  • Fresh ground black pepper

Preparation

  1. Boil water for pasta and cook the fusilli according to package directions, then drain and set aside.

  2. In a skillet, cook chopped garlic in olive oil until golden, about 2 minutes on medium heat.

  3. Add a pinch of crushed red pepper if desired, sliced king oyster mushrooms, and salt lightly, then cook for 2 minutes until browning.

  4. Add chopped broccoli rabe, halved brussels sprouts, quartered baby red bell peppers, and salt again.

  5. Cook for about 5 minutes, stirring or flipping as needed, then add vegan butter.

  6. Add the cooked pasta and about 3 tablespoons of water to the pan to steam the vegetables and combine flavors.

  7. Serve immediately, hot, and sprinkle with copious fresh ground black pepper.
