King Oyster Mushroom Broccoli Rabe Fusilli
Ingredients
- Fusilli pasta
- 4 cloves chopped garlic
- 1 tablespoon olive oil
- Pinch of crushed red pepper (optional)
- 1 pound sliced king oyster mushrooms
- Salt (to taste)
- 1/2 bunch chopped broccoli rabe
- 8 halved brussels sprouts
- 3 quartered baby red bell peppers
- 2 tablespoons vegan butter
- Water
- Fresh ground black pepper
Preparation
Boil water for pasta and cook the fusilli according to package directions, then drain and set aside.
In a skillet, cook chopped garlic in olive oil until golden, about 2 minutes on medium heat.
Add a pinch of crushed red pepper if desired, sliced king oyster mushrooms, and salt lightly, then cook for 2 minutes until browning.
Add chopped broccoli rabe, halved brussels sprouts, quartered baby red bell peppers, and salt again.
Cook for about 5 minutes, stirring or flipping as needed, then add vegan butter.
Add the cooked pasta and about 3 tablespoons of water to the pan to steam the vegetables and combine flavors.
Serve immediately, hot, and sprinkle with copious fresh ground black pepper.
