One-Pot Chicken Orzo with Vegetables
Ingredients
- 2 large chicken legs
- 250g orzo pasta
- 450ml chicken stock
- 1 can chopped tomatoes
- Black olives with herbs
- 1 red pepper
- 1 green pepper
- 1 red onion
- 3 cloves garlic
- 1 tsp oregano
- 1 tsp dried sage
- 1 tsp smoked paprika
- Fresh lemon slices
- Salt and pepper
Preparation
Mix oregano, sage, paprika, salt, and pepper. Coat the chicken and brown in an oiled cast iron pot for 6-8 minutes. Remove the chicken.
Add sliced peppers, onion, and garlic. Cook covered on low for 10 minutes.
Add chicken stock, chopped tomatoes, orzo, remaining spices, olives, and lemon slices.
Put the chicken back on top, cover, and cook at 200°C for 20-25 minutes. Let rest for 5 minutes before serving.
