Refreshing Vegan Pitaya Smoothie Bowl

Ingredients

  • 1/2-1 medium banana chopped and frozen
  • 1/2 -1 cup lightly steamed and frozen cauliflower
  • Pitaya, fresh or frozen about 4 oz or 1-2 scoops freeze dried powder
  • 1 cup frozen strawberries
  • 1/2 cup almond greek yogurt
  • 1/2 cup plant milk or coconut water to thin down
  • 1 scoop pea protein or any adaptogen you like

Toppings

  • granola
  • nuts or seeds
  • mixed berries
  • seasonal fruit

Preparation

  1. In a food processor or high speed blender, add the pitaya, frozen banana, cauliflower, strawberries, yogurt, milk or coconut water and process until smooth.

  2. Pour the mixture into 2 bowls.

  3. Top with granola, nuts or seeds, and more fruit if desired.
