Refreshing Vegan Pitaya Smoothie Bowl
Ingredients
- 1/2-1 medium banana chopped and frozen
- 1/2 -1 cup lightly steamed and frozen cauliflower
- Pitaya, fresh or frozen about 4 oz or 1-2 scoops freeze dried powder
- 1 cup frozen strawberries
- 1/2 cup almond greek yogurt
- 1/2 cup plant milk or coconut water to thin down
- 1 scoop pea protein or any adaptogen you like
Toppings
- granola
- nuts or seeds
- mixed berries
- seasonal fruit
Preparation
In a food processor or high speed blender, add the pitaya, frozen banana, cauliflower, strawberries, yogurt, milk or coconut water and process until smooth.
Pour the mixture into 2 bowls.
Top with granola, nuts or seeds, and more fruit if desired.
