Roasted Sweet Potato Boats with Harissa and Spicy Guacamole

Ingredients

  • 5 medium size sweet potatoes
  • 1 tbsp of olive oil
  • Salt and pepper
  • 1 tub of Good Foods Guac
  • 5 tablespoons of harissa paste or red pepper paste

Garnish

  • Handful of pomegranate seeds and rosemary

Preparation

  1. Preheat oven at 390 F.

  2. Cut the sweet potatoes in half lengthwise.

  3. Line a tray with a parchment paper and place the sweet potatoes on the tray.

  4. Season with salt and pepper and drizzle it with olive oil.

  5. Turn sweet potatoes face down and roast for 35 min.

  6. Remove the sweet potatoes from the oven.

  7. Let them sit for 15 min until they cool off.

  8. Spread some harissa paste on each potato boat and top it with spoonful of spicy guac.

  9. Garnish it with pomegranate seeds.
