Roasted Purple Sweet Potato Wedges
Ingredients
- 300g purple sweet potatoes
- 2 tbsp flour
- 3 fresh lemon thyme
- 3 tbsp olive oil
- 2 tbsp rice vinegar
- 1 onion, thinly sliced
- Salt to taste
Preparation
Preheat oven to 200°C.
Oil the sheet pan and set aside.
Cut the sweet potatoes into 1/2 inch thick wedges.
Add the potatoes to a pot and pour in water until it covers the potatoes.
Add rice vinegar and salt, then boil the purple potatoes until soft, about 10 minutes.
Place the cooked purple sweet potatoes on the sheet pan and sprinkle the flour on them before adding the sliced onions and lemon thyme.
Roast in the oven for 25-30 minutes.
Stir once halfway through cooking time.
Serve immediately and enjoy.
