Festive Roasted Brussels Sprouts

Ingredients

  • 13-14 large Brussels sprouts, cut in half
  • 1 onion
  • 1/2 tablespoon cumin seeds
  • 1/2 tablespoon xylitol or sugar
  • 1/2 tablespoon balsamic vinegar
  • 2 teaspoons cumin powder
  • 2 teaspoons cayenne powder
  • 2 teaspoons smoked paprika
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons toasted pistachios
  • 1 dried currant, date, or cranberry
  • Olive oil
  • Salt to taste

Preparation

  1. Mix Brussels sprouts with 1 teaspoon of smoked paprika, cumin and cayenne. Drizzle with olive oil. Place on a baking tray cut side down and roast in a preheated oven at 180°C for 20 minutes.

  2. Turn Brussels sprouts around after 20 minutes and place under the grill for 5-7 minutes until the tops are charred.

  3. Heat olive oil in a pan and add cumin seeds, onions, sugar and balsamic vinegar. Cook frequently stirring until onions are caramelized.

  4. Add roasted Brussels sprouts and add 1 teaspoon of smoked paprika, cumin and cayenne.

  5. Mix to combine then add toasted nuts and currants.

Notes

  1. This is a favorite Christmas dish and all ingredients can be sourced from Sainsbury's.
