Festive Roasted Brussels Sprouts
Ingredients
- 13-14 large Brussels sprouts, cut in half
- 1 onion
- 1/2 tablespoon cumin seeds
- 1/2 tablespoon xylitol or sugar
- 1/2 tablespoon balsamic vinegar
- 2 teaspoons cumin powder
- 2 teaspoons cayenne powder
- 2 teaspoons smoked paprika
- 2 tablespoons toasted pine nuts
- 2 tablespoons toasted pistachios
- 1 dried currant, date, or cranberry
- Olive oil
- Salt to taste
Preparation
Mix Brussels sprouts with 1 teaspoon of smoked paprika, cumin and cayenne. Drizzle with olive oil. Place on a baking tray cut side down and roast in a preheated oven at 180°C for 20 minutes.
Turn Brussels sprouts around after 20 minutes and place under the grill for 5-7 minutes until the tops are charred.
Heat olive oil in a pan and add cumin seeds, onions, sugar and balsamic vinegar. Cook frequently stirring until onions are caramelized.
Add roasted Brussels sprouts and add 1 teaspoon of smoked paprika, cumin and cayenne.
Mix to combine then add toasted nuts and currants.
